藜麥炒蔬菜 Stir Fried Quinoa and Vegetables

? 2杯藜麥+ 4杯水
? 3湯匙特級初榨橄欖油
? 2個大蔥,切丁
? 2.5杯胡蘿卜薄片
? 2個紅甜椒,切丁
? 6瓣大蒜,切碎
? 1湯匙姜末(可選)
? 1束綠葉蔬菜,去梗并切碎

步驟

  1. 將藜麥和水放入中鍋,煮沸。煮沸后,將火調小,蓋上鍋蓋煮15-20分鐘,或至液體被吸收。
  2. 同時,把所有蔬菜切碎。藜麥煮熟后,倒入一個大碗。把鍋擦干凈。鍋中加油,中火加熱。加入洋蔥和胡蘿卜翻炒約10分鐘,多攪拌。

Ingredients

? 2 cups quinoa + 4 cups water
? 3 tbsp extra virgin olive oil
? 2 large green onions/scallions, diced
? 2 1/2 cups thinly sliced carrots
? 2 red bell peppers, diced
? 6 cloves garlic, minced
? 1 tbsp minced ginger (optional)
? 1 bunch green leaf veggie, de-stemmed and finely chopped
? 1/3 cup soy sauce
? 3 tbsp hot sauce

Instructions

  1. Place quinoa and water in a medium pot. Bring to a boil. Once boiling, reduce heat to low and simmer covered for 15-20 minutes, or until the liquid is absorbed.
  2. Meanwhile, chop all the vegetables. When the quinoa is cooked, dump into a large bowl. Wipe down pot. Add oil to pot and heat over medium heat. Add onions and carrots and sauté for about 10 minutes, stirring often.
  3. Add peppers, garlic, and ginger and sauté for another 5 minutes. Add green veggie and sauté just until wilted (a few minutes).
  4. Dump cooked vegetables into bowl with cooked quinoa. Add soy sauce and hot sauce and stir well to combine. Serve warm.
